  1. There's a very good chinese food place near me that I sometimes get
fried rice from. I can't eat it at one sitting so put it in the fridge
to eat the next day. The problem is, the rice is hard and dried out when
I go to eat it. So my question is: how do I reheat it?

    Thanks!

Don't you seal the container... I've never had fly lice go
dry over night... and I don't ever bother reheating Chinese
food, it's best eaten cold for breakfast.

First, store it in a container just large enough to fit it
all in. Make sure it closes tightly. The rice is dehydrating
    from exposure to air.

To reheat, put a teaspoon of water into it, stir and,
lightly covered, do it in the mike, testing often to just
get it hot but not cook it appreciably more.

It is just dehydrated. Mix in a spoon of water and cover
while reheating. Microwave works fine for me, but you can
use any oother method including refrying. You'd have to
experiment a little until you get the amount of water and
heating time right for your method.

First of all, store it properly. Remove it from the takeout
container to a covered plastic one (like Tupperware or
Rubbermaid)so it doesn't dry out in the refrigerator. When
you reheat it, sprinkle very lightly with water and
microwave it, loosely covered on a plate or bowl, for as
short a time as possible to heat it but not dry it out. It
helps to stir it halfway through the heating.

Add a pat of butter and about 1 tbs water, wrap well with
Saran wrap, and nuke it for a minute or two.

Cover the rice in an airtight container and it should be
fine for a couple of days. When ready to reheat it, just put
the rice on a microwave safe plate, sprinkle a teaspoon's
worth of water over the rice and nuke for a minute or two,
stir, and repeat until the rice is piping hot. This works
every time for me for any type of rice.

Yum, leftover fried rice - one of my favorites. I usually
re-heat on a dinner plate with a wet paper towel covering
the dish. I usually set the microwave to medium heat and
check during the heating process. This usually takes care of
the dried-out effect. SusanB in GA

Shel' is a real he-man. He just tosses a bit of leftover
chinese food, some cold pizza, a raw egg or two into the
blender for breakfast, just prior to his 5 mile power walk
and an hour in the home gym........ ;-)

Chinese food for breakfast is great, but I heat it first and
I never eat directly from the box.

Ahem - you're shooting close to home, sister. Son made a
pizza souffle for breakfast. I'm not fond of it, but the
rest of the family likes it.

I usually put the leftovers in a plastic container after I
am done, and just eat it out of there for breakfast.
    Sometimes I heat it up.

This ergot on rice thing is way overblown. The chances of it
happening are so miniscule as to be zero.

Also, please tell me how to get the leftover rice into a
bowel - or then again, maybe I don't want to know!
