Hard Boiled Eggs

  1. I value these as a snack but I am concerned with the effects
    that boiling them for 10 minutes produces on the proteins,
    fats, cholesterol, and vitamins within the egg.

    What are your thoughts?

  2. You don't have to boil them for ten minutes. Bring the pot
    to a boil, cover it and let it sit (not over heat) for 20
    minutes. The eggs will be cooked perfectly.

    I am hoping you are eating the white part anyways...an
    excellent source of protein with no cholesterol.

  6. I'm eating the entire egg, including the egg yolk. I want to
    be sure that cooking them in the fashion that produces a
    hard boiled egg doesn't leave the cholesterol, fat and
    protein in a form that is far less nutritious than that
    found in a raw egg, i.e. likely to contribute more to free
    radical formation, or perhaps the amino acids in the
    proteins is greatly harmed/reduced in absorbability, etc.
    These are my concerns and I'd like someone knowledgeable on
    the subject to give me their opinion, or at least point me
    in the direction of some research on the subject.

  7. There is more than one way to cook an egg. You can boil it
    to death and it will be tough and unpalatable or you can
    cook it gently. Hard boiled eggs do not need to be boiled
    for ten minutes, all they need is to heat them until they
    are firm. The longer you cook an egg, the tougher it gets.

    I don't think you want to eat raw eggs because of the
    salmonella possibility so you need to go with cooked eggs.
    How you cook them can make a difference in their texture so
    it is not illogical that it could make a difference in their
    nutritional value.

    The cholesterol and fats will not significantly oxidize at
    100 C in a few minutes, in fact cholesterol has shown to be
    stable for long periods of time (hours at that temperature).
    Enzymes will be killed, and various vitamins will be
    degraded however.
