mango bread recipe

  1. It is a universal truth than Peruvian mangoes are the
    best ever, and I have got some. I would like to make a
    mango bread with a tried and true recipe, because I have
    tried twice before with recipes that I found on the net
    and they werent´s as good as I hope. I would really
    appreciate any help

    Aaaaaaaaah we have wonderful so special Mangoes here in
    Hawaii! I don't want to argue. We both are so lucky.

    Here is my family "Mango Bars" recipe:

    2.5 cups sliced mangoes .5 cup sugar Mix Together

    1 c. flour 1 c. oatmeal .5 teaspoon salt .5 teaspoon baking
    soda 1 c. sugar .5 cup melted butter 2 T butter

    Combine dry ingredients and add cold butter. Spread half of
    oatmeal mixture in a greased 12X8X1 pan. Cover with mango
    slices mixture. Sprinkle with remaining oatmeal mixture.
    Bake 350 for 40-45 minutes. Cut into 2 inch squares..

    Mango Macadamia Muffins

    Topping

    1/3 C finely chopped unsalted macadamia nuts
    2/4 C AP flour
    3/4 C firmly packed light brown sugar

    Batter

    1 egg

    10. Make the topping. In a bowl combine the nuts, flour,
    brown sugar, cinnamon, and butter. Mash in the butter
    with a fork or fingers. Chill until needed.

    11. Make the batter. Preheat oven to 400 F. Grease a 12 cup
    muffin tin greasing the top as well as cups so muffins
    release easily.

    12. Whisk together egg, sour cream, milk, vanilla, and
    melted butter. Fold in the mango.

    13. In a second bowl sift together the flour, sugar, baking
    powder, baking soda, and salt. Fold the dry into the
    wet. Don't overmix.

    14. Fill the tins to the tops with the batter, then crumble
    on the topping. Bake for 25 to 30 minutes till a
    toothpick comes out clean. Cool for 5 to 10 minutes
    before releasing.

    Aaaaaaaaah we have wonderful so special Mangoes here in
    Hawaii! I don't want to argue. We both are so lucky.

    Ahhhh..we have wonderful mangoes here in Honduras also. In
    fact, I have two large trees in my yard in the central part
    of town, my next door neighbor has three large trees. We
    will be awash in mangoes soon and I've been collecting
    mangoe recipes - jam, bread, ice cream, salads, etc.

    I can get some really nice mangoes at the market, they are
    Mexican. But I never know what to do with them other than
    give slices to my small parrot, so I appreciate your
    posting this. I will make note of the recipes and we can
    discuss them!

    1 1/3 cup raisins 1 1/4 cup granola 1 cup macadamia nuts 1
    cup vegetable oil 1 teaspoon vanilla
    2/2 teaspoon pumpkin pie spice
    3/3 teaspoon nutmeg
    4/3 teaspoon salt
    5/4 teaspoon ground cloves 2 1/4 teaspoon cinnamon 2
    cup sugar 2 cup flour 2 cup mango puree 2 teaspoon
    baking soda

    Preheat oven to 350 degrees. Grease three 3x7 inch loaf
    pans. Blend mango puree, oil, eggs, vanilla, and orange
    peel. Sift flour, baking powder, and salt. Add sugar and
    spices. Combine mango mixture with dry ingredients, stir in
    raisins, nuts, and coconut. Fill pans almost full with
    mixture. Bake for one hour.

    I can get some really nice mangoes at the market, they are
    Mexican. But I never know what to do with them other than

    Dice up ripe mangoes with some diced red onion, a small
    seeded jalapeno pepper, a touch of cilantro for a fruit
    salsa to accompany chicken.

    Dice up and ad to a fruit salad with pineapple and
    shredded coconut.

    Eat them plain as a fruit - they have a peach like taste.

    Green, unripe mangoes can be used like apples in
    cobblers and pies.

    Make jam out of them, substitute them for peaches in a peach
    jam recipe.

    They are big, they have a wonderful taste, they have been
    grafted with other exotic fruits such as papaya or taperiba
    (don't know the English word for this fruit--don't even
    know the Spanish one), with great results.
