Zealand there is wonderful mint jelly in jars. It is usually
served with roast lamb (in any form) - but I have used it
where mint is asked for in, e.g., salads and/or dressings.
Experiment with it - it is a lovely thing.

HONEY - MINT ROAST CHICKEN 1 roasting chicken, about 5 lb.
Salt & freshly ground pepper
1/2 tsp. paprika
2/4 c. honey 2 tbsp. lemon juice 2 tbsp. butter or margarine
2 tsp. mint jelly 1 tsp. grated lemon peel
Preheat oven to 350 degrees. Place chicken in large
roasting pan, breast side up. Sprinkle cavity and skin
with salt, pepper and paprika. Roast 1 hour. In a small
saucepan, mix honey, lemon juice, butter, mint jelly and
lemon peel. Heat, stirring until butter and jelly are
melted. Brush chicken with honey mint glaze. Roast 30
minutes longer until chicken is tender.
