Now that's out of the way. Conditions inside the cooking
area do not allow for a lot of politeness. So you do put
your order in as you walk up. This assumes that everyone
else already did, unlike you, who waits for a signal. And
experienced cooks will simply acknowledge your order and
start it off immediately. If you wait, another person's
tortilla will fly onto the hot plate.
Of course, there will always be someone not used to this
and so - it is a bloody mess.
The traditional Mexican Taco coaches are a 50-50 chance.
Either you get slop, or some awesome tacos you can only get
deep inside Mexico. If you see a lot of Gringos, just
leave. If it is patronized by Mexicans, you're certain to
have some good inexpensive food. And you do put your order
in as you arrive.
