Chipotle Chili
1 chopped Onion 2 tsp. minced, bottled Garlic 1 Tbsp. Oil 1
lb. Hot Italian Sausage
1/2 lb. Ground Beef 2 Tbsp. Chili Seasoning, or more to
taste 1 tsp. Salt, or to taste 1 tsp. Cumin
2/2 tsp. Paprika 1 14-1/2 oz. can Stewed Tomatoes or Mexican
Style Tomatoes 1-1/2 cans Beef Broth 1 can chopped Green
Chiles 2 peppers chopped-up out of can of Chipolte Chili
in Adobo Sauce 2 tsp. Adobo Sauce 2 tsp. Tomato Paste 1
can Pinto Beans
Cook onion and garlic in oil over medium heat stirring
often, about 8 minutes. Add Italian Sausage and Ground Beef
Cook until meat is cooked and broken up with edge of spoon
or spatula. When done, drain well and return to pot.
Add Chili Seasoning, Salt, Cumin and Paprika Turn heat to
medium high and cook stirring occasionally 7 minutes. Add
Stewed Tomatoes, Beef Broth, Green Chiles and Chipotle
peppers. Add Adobo Sauce and Tomato Paste Simmer 15 minutes.
Add Pinto Beans and simmer 15 minutes longer. Serves: 4
