I've told Tom/doe that iron is a secondary issue, and since
then he seems to be posting more about oxidative stress.
Oxidative stress that can be prevented involves too much
unsaturated fatty acids and oxidized cholesterol in the
diet, along with too little antioxidants, but iron overload
is a problem too. There was a recent study, I think Finnish
(you can find it on www.pubmed.com), which concluded that
oxidized cholesterol was only a problem in people who were
overloaded with iron. However, if you ate a lot of
antioxidants and saturated fatty acids (such as coconut oil)
and avoided unsaturated fatty acids (since they are in most
foods that have some fat content, one might also use the
overload term and say unsaturated fatty acid overload) I
don't think the iron would be nearly as much of a problem,
assuming that you've got the other essential minerals
(copper, selenium, magnesium, in particular). From what I
understand, the Finnish diet is not low in unsaturated fatty
acids, so that's probaby why the iron overload had such an
effect on the people in the study.
