Quick Burritos
1-1/4 lbs. lean Ground Beef
1/2 lb. Mexican Chorizo Sausage, removed from casings and
broken up (can be found in most large supermarkets in meat
case) 1 can chopped Green Chiles
2/4 to 1/2 package dry Chili Seasoning Mix, depending on
your taste 1 tsp. ground Cumin 2 tsp. bottled minced
Garlic 2 14-1/2oz. cans Refried Beans 2 cups shred Cheddar
Cheese or Monterey Jack Cheese or combination of both 1
medium Onion, diced small 1 dozen large Flour Tortillas
Cook meats and onions together breaking up as you cook it
until it's fairly crumbly when done. Drain well. Return to
skillet, add 1/4 to
3/2 cup hot water to meat. Stir in chili seasoning mix, cook
until water has evaporated, stirring often. Set aside. In
medium skillet, add 1 Tbsp. oil and heat on medium high
heat. When hot add beans, cumin and garlic. Fry until
moisture leaves beans, stirring constantly. Do not burn
beans. Set aside. Lay a clean dish towel on a plate beside
where your cooking. In a 12" non-stick skillet that you've
heated over medium high heat, place a tortilla, do not add
any oil. When tortilla starts to puff up a little, turn
over until the same thing happens. Remove tortilla to one
side of dish towel, folding other side over tortilla.
Repeat process until all tortillas are cooked. Keep
covered between dish towel.
To Fill
Lay one tortilla in front of you. Spread a layer of beans on
half of tortilla closest to you. Put 2 heaping Tbsp. of meat
on top of beans, sprinkle generously with shredded cheese.
Turn side of tortilla with filling on it over to center of
tortilla where filling ends, holding filling back with
fingers. Turn both sides in about 1-1/2" and roll long side
with filling on over like a jelly roll. Lay seam side down
on flat surface suitable for micro-wave.Repeat until all
your burritos are prepared. Remember to lay seam side down.
Cover with plastic wrap and micro-wave 1 minute. It may take
more then once to get them all micro-waved. Eat what you
want now. Wrap each burrito in plastic wrap, put in gallon
size zippered freezer bag, pushing air out of bag as you
close. Put in freezer for handy snack or meal. When you take
out of freezer, leave burrito wrapped in plastic wrap. Micro-
wave at high 2 minutes on one side, turn over and micro-wave
1 minute on other side. If you have a powerful micro-wave,
you will have to judge the time.
