Refigerating tahini?

  1. Does tahini absolutely have to be refrigerated? I ask b/c I
    bought a new jar and used it straight out of the jar to make
    ful (fava beans w/tahini, garlic, lemon juice, and olive
    oil) and it is so much creamier then the stuff I had sitting
    in the fridge. The difference in flavor and texture was
    extremely noticeable. Can I just keep the tahini (roasted
    organic) in cupboard so it stays nice and soft or should I
    just nuke the ammount I'm using for 20 seconds before
    putting it in my hummus?

    It's a seed butter so it has to be kept cold or it will go
    rancid pretty quickly. You don't have to MW to loosen it
    up, just mix the hell out of it with a sturdy spoon. It'll
    warm right up.

    Refrigerating tahini and nut butters does 2 things - it
    increases the usable lifetime, and delays oil separation.
    It's best to keep such things refrigerated so that they're
    freshest. If you want it to be soft, just take the jar out
    somewhat earlier, allow it to come to room temperature, and
    use. No harm will come to the tahini if you do, and then you
    can re- refrigerate. I'd advise against microwaving. It
    wouldn't take too much extra time for the tahini to denature
    if you left it in just a bit too long, and in addition hot
    spots would almost surely lead to local denaturing at one
    point or another. (Result=foul flavour)
