I seem to recall a restaurant I worked in many many years
ago kept them peeled and in water in the walk-in, but that

Don't boil them until you are ready to use them.
It's been my personal experience that boiled eggs will keep
a fraction of the time that raw eggs will.
Good, undamaged raw eggs can keep for up to 6 weeks or more
at 40 degrees.
I've had hard boiled eggs, in the shell, spoil after
about 2 weeks.
Peeled and sliced? I'd guess 2 to 3 days TOPS.
