Microwave Thermometer

  1. Dear Food Experts I have an old Amana Microwave, it is
    getting very old (the repair facility will not fix it
    again). I have looked at the new units and found they do
    not support a candy thermometer probe. The one recipe I
    dearly cherish, peanut brittle, which comes out perfect
    every time, requires the cooking to hard crack. Does anyone
    use their (modern) microwave to make confections? If so

    I've used this recipe for peanut brittle and can vouch that
    it works well.

    This recipe is formulated for a 1000 watt microwave. Pecans,
    almonds or any other nuts can be substituted. Just make sure
    they are raw and unsalted.

    Microwave Peanut Brittle

    1 cup Raw Spanish Peanuts 1 cup Sugar
    1/2 cup White Corn Syrup
    2/8 teaspoon Salt 1 tablespoon Unsalted Butter (do not use
    margarine) 1 1/2 teaspoons Vanilla 1 teaspoon Baking Soda

    Mix together Peanuts, Sugar, Corn Syrup and Salt in a 2
    quart mixing bowl. Microwave on High for 5 minutes; stirring
    well after 3 minutes. Add Butter and Vanilla; blending well
    with a wooden spoon. Microwave on High for 1.5 minutes. Add
    Baking Soda and stir until foamy. Pour onto a buttered
    cookie sheet spreading thin. Let cool and break into small
    pieces. Store in an airtight container.

    Some of the larger GE models have a built-in programable
    temperature probe/sensor. I believe Sharp also has microwave
    ovens with a probe/sensor. You need to do some shopping.

    Granted there is more to life than Sears, but they carry the
    standard brands. I will look further. Here is the recipe:

    2 cups granular sugar 1 cup light corn syrup
    1/4 cup water 2 1/2 cups salted peanuts (12 oz can) 3 Tbs.
    butter (margarine) 1 Tsp. vanilla 2 Tsp. baking soda

    combine Sugar, Corn syrup & Water

    Micro to level 8 (293 deg.)

    add peanuts & Butter

    Micro level 9 (305 deg.) - Hard Crack

    add Vanilla & Baking Soda

    Mix thoroughly Spread on edged cookie sheet

    Makes 2 pounds

    Is that a special thermo probe v. the standard probe that
    some micro's offered?

    If its nothing more than the standard probe you can look for
    models that have a thermo probe option. I've not looked at
    micros for a while so I don't know if that option is still
    available on newer models. I would think so.
