Just make ice cream with a regular ice cream maker, and
serve immediately instead of freezing till it's hard.
Otherwise, I believe that using monosaccharides rather
than sucrose will lower the freezing point, making the ice
cream softer.
There are soft ice cream machines; a quick Google will
reveal many. All they are, basically, are ice cream
machines designed to make it easier to dispense the ice
cream immediately rather then move it into a container for
further freezing.

When you make ice cream it is still a little runny. You
have to stick it in the freezer for four hours or more for
it to really set. The freshly frozen stuff from a home
machine is a texture like "soft serve". There are
relatively cheap home machines that will turn a frozen ice
cream into a soft serve.
