In industrial use, there is a fish gelatin and a pork
gelatin. The fish product is not nearly as versatile as
    the beef or pork products.

This is an area of difficulty for Industry. In addition to
Mad Cow fears, beef gelatin is objectionable to Hindus, pork
gelatin is objectionable to Jews and Muslims.

An analysis of the gelatin manufacturing process suggests
that diseases have a good chance of not-surviving the severe
chemical processing. Also, because the gelatin is so
drastically "transformed" during processing, some Rabbi's
and Imams(?) will grant it Kosher and Halal status, but some
won't. Enough to drive you nuts

    Regards
    Old Al

There are a lot of gelling agents that are not of animal
origin: agar, from a seaweed, is probably the first thing
that pops to mind, and one that's used in various Asian
    cuisines. See, for example: bbc.co.ukaskth
