mint in lasagna?

  1. i have used mint in my lasagna (a basic veggie recipe with
    ricotta and spinach as the filling) for a while now. its
    really tasty and i get many compliments on it. does anyone
    else do this?

    I use mint as a substitute for bay leaves in a lot of
    things; a little mint is good is salsa, for instance.

    Generally near the end of cooking when I'm adjusting the
    seasonings and say, "this could have used a bay leaf", I
    sprinkle in a pinch if mint.

    I can't say that I've used it in lasagna, but I don't see
    anything weird about it.

    Never used mint, but mom did teach me to add just a dash of
    cinnamon to the top of the ricotta.....

    No. Real lasagna has no mint and no spinach. It has meat,

    Well, since you asked :> When I lived in Buffalo I bought
    some of the local fresh ravioli. When I got them home and
    bit into one, I found out it had mint in it. What a shock! I
    ate them because I won't waste good food but I didn't care
    for it and avoided it in the future. I think it's a Sicilian
    "thing," I'd never run into it before (or since, actually).

    Sue(tm) Lead me not into temptation... I can find it myself!

    Never used mint, but mom did teach me to add just a dash of
    cinnamon to the top of the ricotta.....

    i use about a tsp or so of nutmeg in the ricotta. same
    idea 🙂 i also use lots of garlic and pepper, though, so
    it probably cancels it out :> i won second place in a
    cooking contest at work with a veggie chili that i put
    cinnamon in. yum!

    asking if it was some sort of authentic type thing, just if
    anyone else had tried it. perhaps i should change the title
    in my recipe notebook to "casserole using lasagne"

    The addition of the mint actually sounds pretty interesting!
    Now I've just got to get another plant going... The dogs
    finally stomped all mine to death. <sigh> Don't want it in
    the main herb garden as it tends to take over! :-)

    Been experimenting with using just teensy amounts of
    cinnamon in other italian, and yes, mexican recipes as well.
    Sounds wunnderful for chili, never tried that! Sans frijoles
    I hope? <G>

    I like the idea of the nutmeg in the Lasagna as well! :-d

    nope. used pintos and black beans. also parsnip, rutabaga,
    butternut squash and bulgur. when i came into work the next
    day, there was only a few cups left out of the gallon and a
    half or so that i cooked!

    cinnamon is nice added to the cumin, etc. in taco and fajita
    recipes, IMO. also BBQ sauces, but im sure that is agianst
    *real* BBQ ethos :>

    I just got my new penzeys catalog. methinks i might have to
    drive out to grand rapids just to sniff 'em for myself! 🙂
    could bring my camping stove and a cooler and do a test run
    in a park perhaps 🙂

    Some people have never tried vegetarian Lasagna!
    Personally, I love it and am not even a vegetarian. Chicken
    lasagna is good too.

    What do you use as the main veggie? The Lasagna primavera at
    work is made with grated zuchinni.

    Ooh! I like the idea of mixing spinach with the ricotta!
    But, prefer to "top" the ricotta with the spices rather
    than mix it in. Gives it a "layered" flavor if you know
    what I mean, and the cooking process causes it to mingle
    somewhat anyway...

    Mushrooms are a given, even WITH meat! <G>

    Rather than adding the squash to the sauce tho', I give it
    it's own layer which is why I grate it, but I have a rotary
    grater that makes that task quick and easy.

    Zuchinni make a grand meat substitute! I've sometimes used
    it as a pasta substitute too, using a very coarse grate,
    sort of a jullienne (sp?) and lightly steaming it so it's
    still slightly crunchy and topping it with a marinara and
    mushroom sauce.
