OK, frame is on order, parts are starting to come togehter, and now comes the big question: wheels.
I'm looking to build this up with discs front and rear, but really don't feel like dropping $500 on wheels. I figure I can go with a pretty ordinary set of XT/Mavic whatevers for under $200 and just use a single cog and a stack of spacers. Or I can spend closer to $300 for a pair of Surlys laced to Salsa Deglados through QBP, or ..... What else am I missing?

Buy a set of Paul hubs, and have your local wheel builder lace them up. You would be looking at $350 or so, and have a far better wheelset than either of the other options you listed.

You can get a set of ss cassette hubs from On-One (I've had a set for over 3 years and no problems) or from QBP where they are call Novara or something like that. Great rear hub, easy to change the sprocket.

The On-One brand cassette hub is the same one as the one in QBP. The guy from On-One designed it, had a company build it. That company turned around and built it with their name on it too.
The MB-2 is in a state of transformation right now. It has new wheels, tires, and cockpit. I'll be putting a new real derail on it next week and it will be out in the VA mud for some fun.
