Caribbean Cooking - Scallops?

  1. We have some friends coming over to watch Pirates of the Caribbean
    and we were planning on a Caribbean themed meal. I have planned so far:

    Tostones Meat Pies Rice Pilau Marinated Cucumbers Pineapple Rum Cake

    I also have some scallops in the freezer, and would like to use them. Is there any particularly
    Caribbean way to marinate/prepare/cook them? Something you have made and enjoyed please, not just
    general references. Thanks!

    You can't leave out Pirate's Grog:

    Grog 1 shot rum 1 teaspoon sugar (preferably superfine) Squeeze of lime juice Cinnamon stick
    Boiling water

    Stir all ingredients, adding enough boiling water to fill mug or glass.

    We've made Coconut Scallops with Mango Salsa, but I couldn't give you a recipe as we just sort of
    threw things together for the batter - basically a tempura batter with the addition of toasted
    coconut. Very tasty. Maybe pick up some shrimp to have in addition to the scallops?

    Ranee, I don't have any Caribbean scallop recipes but I'd think a kabob thing with fruit would
    work. Be sure to have plenty of spiced rum during the movie. I bought the DVD a couple of weeks
    ago. I hope you enjoy your evening with your friends. Be sure to put the swords away before the
    movie starts 😉

    Sounds good. I think I'll stick with just the scallops, though, since I'm 2 1/2 weeks from
    delivering a baby, and we already have another meat in the meat pies. I have a room to finish
    painting (short sessions, windows and doors open, good ventilation), two dinners coming up at
    our house, two that we are attending and a last fling movie date before my surgery and baby
    day. Yikes!

    As pacifist as I am, I really want swords. Maybe it's just my ethnicity coming out, but I see
    great, long Arabic swords crossed over our mantel. However, we have little boys who would try to
    play with them, and they are rather tenacious. So, the only sword we have is a plastic pirate
    sword that is hanging over the upstairs bedroom for two of our boys (the room I'm finishing
    painting, tropical ocean/island theme).

    As for the fruit kabob, that sounds really good. I might do that separate from the
    coconut scallops.

    This sounds really good. Light or dark rum? Dark probably. I would really only be making this for
    one person, though. Rich doesn't drink, I'm pregnant and the other couple has a designated
    driver. Oh well.
