  1. Hugh's Favorite Pork Chops

    4 center cut pork chops
    1/2 tsp. table Salt, to taste
    2/8 tsp. Black Pepper. to taste
    3/8 tsp. Paprika, to taste
    4/3 cup Apple Cider Vinegar
    5/2 cup water

    Season chops on both sides with salt, black pepper, paprika. Spread out and lay aside. Preheat a
    large frying pan for which you have a lid over medium-high heat. Gently place chops in frying pan
    and sear on each side until golden brown. Pour Vinegar over chops and follow with the water.
    Immediately cover with lid and reduce heat to medium. Cook chops 20 minutes, or until tender,
    turning once after about 10 minutes. Keep lid on tightly. Add a bit of water if needed. Reduce heat
    to simmer. Serve hot with pan juices over them if there is any. If not add a bit of water to the
    emptied pan and deglaze. Pour over chops.
