  1. Sweet Potato Stew Serves 4-6

    2 teaspoons Olive oil 1 pound Stew meat, cubed 1 medium Onion, diced 2 stalks Celery, diced 1
    teaspoon Garlic, minced 1 cup Mushrooms, quartered 1 Tablespoon Flour 2 cups Beef broth 2 cups
    Chicken broth 1 1/2 cups Sweet potatoes, large diced 2 1/2 teaspoon Cumin, ground 1 cup Tomatoes,
    diced Salt and pepper to taste

    Heat the oil in a large soup pot. Add the beef and brown. Add the onions and celery. Cook until just
    soft. Add the garlic and mushrooms. Cook for 2 minutes longer. Sprinkle on the flour and cook for 3
    minutes (stirring frequently). Whisk in the broths. Add the remaining ingredients, bring to a boil
    and reduce the heat. Simmer for 1 1/2 hours (or until the beef is tender). Serve warm.
