low blood sugar and protein

  1. My diet is high in carbs since I don't cook on the stove, in the oven, and I don't keep my fridge
    supplied with fresh fruits and vegetables. It's difficult for me to stand and cook or to have to
    drive to the store more than one a week (if I even manage once a week). High carb meals are the
    easiest to make and easiest to store. I understand I have to adjust this. What foods can I buy that
    are high in protein and can be stored for a long time, without having to be cooked? Stuff like
    peanuts, peanut butter.. what else?

    Also what has a high amount of potassium without having a lot of sugar/carbs aside from peanuts?
    Right now I eat 1/4 cup of raisinets a day. I understand I will have to eliminate that, or adjust
    the amount or something, but I need to replace the potassium somehow.

    eggs last a fair while in the fridge, the fish can come in cans. Bacon lasts a while but the salt
    may interfere with potassium levels.

    A lot of our potassium comes from fruit, veges and animal proteins. Too much fruit is out (but try
    the berries to see the effect they have on you - eat them with some fat like cheese or cream for
    example). There are a wide variety of veges (apart from the starchy ones which you will need to
    watch) that supply potassium - asparagus, cauliflower, green beans, artichokes, tomatoes, spinach.
    Lightly steam the veges to preserve as many nutrients as possible and drink the steamed or boiled
    water. You may be able to tolerate the beans like soy, chickpeas, lentils etc, maybe a few cooked
    with some veges as a soup. Meat, poultry and fish have some potassium. Most diabetics who low carb
    don't seem to have a potassium problem.
