I found pieces of pumpkin at the supermarket and I've just bought one piece weighing approximately 1 kg. I think I'll have to use it soonish because it's been cut and I think I'll dice and bake it.
I'm thinking of taking some potatoes, cut them into halves, dice the pumpkin to approximately the same size, add a bit of oil with garlic and bake it together, but I'm wondering about temperature, how long to bake it and can they be baked together or do they need very different temperature/time. You can roast the pumpkin along with the potatoes....I usually put winter squash or pumpkin in a separate baking dish though in case it cooks a little slower than the potatoes...it's a bit more dense and takes a little more time. You could always cut the pumpkin smaller than the potatoes and put them in the same dish. I generally roast things at a pretty high heat-- 400 F for 45 minutes to an hour, depending on the size of the veg and toss them in a little oil beforehand. About 20 minutes into the roasting, I usually shuffle the veg around for even browning.
