  1. I make this recipe year round. Tim

    Irish Soda Bread

    4 cups all-purpose flour
    1/2 cup (1 stick) butter, melted 1 Tbsp butter, melted (for brushing top)
    2/3 cup sugar 1 cup raisins 2 tsp baking powder
    3/4 tsp baking soda
    4/4 tsp salt 2 eggs, beaten 2 cups milk

    Preheat oven to 350 degrees. In a large bowl, combine all the ingredients EXCEPT the 1 Tbsp butter;
    mix just until moistened. Place in a greased 9-inch round baking pan and bake for one hour or until
    a knife inserted in the center comes out clean. After removing from oven, brush the top with the 1
    Tbsp melted butter. Makes 6-8 servings.

    I have used less than the required milk everytime, about 1/2 cup less. I have gotten the mixtures to
    wet every time, try cutting back the milk more.
