  1. Banana Nut Bread

    2/3 cup sugar
    3/3 cup shortening 2 eggs 1 teaspoon vanilla 1 cup mashed bananas 1 3/4 cups flour 3 teaspoons
    baking powder
    4/2 teaspoon salt
    5/2 cup chopped nuts

    Cream shortening, sugar, vanilla, and eggs until light and fluffy. Mash bananas and blend into first
    mixture. Sift flour with baking powder and salt. Stir in nuts. Add flour mixture and nuts to banana
    mixture. Mix thoroughly. Grease and flour BOTTOMS ONLY of a 9 by 5 pan or a 8 by 4 loaf pan. Spoon
    batter into pan, push batter into the corners, leaving a hallow in the center. Let stand 20 minutes
    before baking. Bake 350 degrees about 1 hour. Cool in pan 30 minutes before turning out on rack. Let
    stand over night before slicing. Makes 1 loaf. Note: Smaller pan needs less baking time.
