Oliebollen
500 gm flour 400-500 ml milk 25 gm yeast
11/2 tsp salt 100 gm dried currants 100 gm raisins 50 gm candies orange or lemon peel 3-4 sour

Dissolve yeast in a bit of slightly warm milk. Put flour and salt in a bowl. Add the dissolved yeast
and about 3/4 of the milk and mix to a very thick batter, adding more milk if necessary. Set aside
the dough to rise. In the meantime wash and dry the fruit, and cut the apples into small pieces.
When the dough has risen sufficiently add the filling and mix. In a large deep-frying pan allow the
oil to warm until a slight vapor begins to come off. Using two spoons or perhaps an ice-cream scoop
form the dough into balls. (before wet the spoons into the hot oil so that the dough comes off a bit
easier) Let the balls carefully into the oil and let them brown on both sides, turning them with a
fork. Remove to absorbent paper towels Serve preferably warm, with powdered sugar.
Makes about 30 Oliebollen (Oil Balls)
