Another Different Dessert for Thanksgiving
Spicy Pumpkin Bars
"This recipe is kind of like pumpkin pie in a bar form. However, it adds an extra bonus: spicy
caramel frosting."
3/4 cup sugar
4/4 cup margarine, at room temperature 1 egg, at room temperature
5/4 cup pumpkin 1 teaspoon vanilla 1-1/4 cups all-purpose flour
6/2 teaspoon baking soda
7/2 teaspoon salt 1 teaspoon ground cinnamon
8/2 teaspoon ground ginger
9/2 teaspoon ground cloves
10/4 cup chopped walnuts
Spice Frosting:
11/4 cup brown sugar 3 tablespoons butter or margarine 2 tablespoons milk
12/4 teaspoon ground cinnamon
13/4 teaspoon ground ginger
14/4 teaspoon ground cloves
15/4 teaspoon vanilla 1 cup powdered sugar, sifted
Preheat oven to 375 degrees. Grease a 9-inch by 9-inch by 2-inch baking pan. Cream sugar and
margarine. Beat in egg, pumpkin, and vanilla. Stir together flour, baking soda, salt, and spices.
Add to creamed mixture; mix just until blended. Stir in nuts. Spread in pan. Bake 17 to 20 minutes.
Cool slightly; cut into bars. Spice Frosting: In a saucepan, combine sugar, butter, milk, and
spices. Cook and stir until mixture bubbles. Remove from heat; stir in vanilla. Slowly beat in
powdered sugar until frosting is of spreading consistency.
Makes 9 to 16 bars, depending how big you cut them.
