    Apple Brandy

    1 cup sugar 1 cup water 2-1/2 lbs ripe apples, stemmed and washed* 1 bottle (1 fifth) brandy 1 tsp
    fruit protector

    Make a simple syrup by bringing the sugar and water to a boil, stirring constantly. When mixture
    clear, remove from heat and let stand until just warm. Quarter, core and thinly slice the apples.
    combine apples, syrup, brandy, and fruit protector in clean 2-qt jar with screw-on lid (or divide
    ingredients between two 1-qt jars). cover and let stand in a cool, dark place for one month. Do not
    refrigerate.

    use a fine-mesh strainer to strain out solids -- discard or save for another use (use in cake or
    over ice cream). Filter liqueur into clean container(s). Cover and let stand for one day before
    racking or filtering into final container(s). Age for one to three months before serving. Yield:
    approx. one quart

    *You can also substitute 1-1/2 lbs fresh apricots stemmed, washed, peeled, pitted, sliced thin; or
    1-1/2 lbs fresh peaches or pears stemmed, washed, cut in quarters, pitted, and thinly sliced; or
    substitute 1 lb fresh blackberries picked over, washed, crushed with a potato masher and let stand
    with fruit protector for 2 hrs; or 1-1/2 lbs fresh red cherries stemmed, picked over, washed,
    halved, pitted, mashed, mixed with fruit protector and let stand 2 hrs.
