  1. Corned beef hash. The real stuff. I cooked a batch of hash browns and mixed them up with some of
    yesterday's corned beef (chopped). Then I refried the mix to get a crust on the bottom.

    Served with eggs over easy and sliced oranges and apples.

    Yum.

    The onions were in the hash browns, and they caramelized nicely.

    Corned Beef Hash is really a simple dish, but I'm sure that there are many variations on it. I have
    always made it without a recipe, the way my mother did, so these measurements are approximate and
    can be varied to taste...

    1/4 cup unsalted butter 3 cups cooked corned beef, chopped or cut in 1/4-3/8-inch dice 3 cups cooked
    waxy potatoes, chopped or cut in 1/4-3/8-inch dice 1 small or medium yellow onion, chopped or cut
    in 1/4-inch dice 1-2 cloves garlic, finely minced
    2/4 cup brown gravy, or gravy made with liquid from cooking corned beef freshly ground black

    Melt butter in large skillet and sauté onion and garlic until onion is transparent, but not browned.

    Add remaining ingredients, tossing to mix well. Press mixture down into pan in one large patty or in
    smaller patties. Cook over medium heat until bottom becomes brown and crusty. Turn (a single large
    patty can be flipped onto a plate and slid back into pan) onto other side and cook until brown and
    crusty. May be kept warm in a slow oven until ready to serve.

    Note: Use an amount of onion and garlic that you prefer. I like the larger amount.

    After St. Patrick's day, we make hash with the leftovers. I used a recipe the first time, but
    haven't since then.

    nice also) (sometimes I put in some diced garlic) oil for frying eggs

    Steam the potatoes or boil them in water just to cover for 10 minutes. Test for doneness, you don't
    want them cooked too much. Drain and add to hot oil in frying pan. Cook until they start to brown a
    bit and add the onions and peppers. Cook until onion is soft. If the frying pan is oven safe, make
    depressions in the hash and crack the eggs into them, else transfer the hash to an oven safe dish
    and do the same. Cook in medium oven until egg whites are set but yolk is runny.

    You're missing out on a great breakfast, then. Chill the can of corned beef hash (or roast beef
    hash), cut out both ends, and push out and slice off patties, and fry them and have them with eggs.

    Home-made is far better, of course, but canned corned beef hash isn't too bad once you get past its
    resemblance to dog food.

    I will eat canned corned beef hash if I don't have the makings for it myself. It's not bad of fried
    up nicely. Canned corn beef, however, is not something I'd bother with. AFAIC, it's right up there
    with Spam and Treat.

    taste, and smell like dog food.

    Make your own from real corned beef (or smoked brisket) and diced potatoes (and a sprinkling of
    cayenne and herbs de province)

    That sounds gooooooooooooood, you've just made me hungry for this! I know what I'm having for

    I have to admit, I like the canned stuff, too. The homemade version sounds good, but we never have
    leftover corned beef that isn't scarfed up in sandwiches. Next time I'll have to cook lots of
    extra meat...

    You're talking about the dog food I love! A couple of fried eggs laid on a nice lump or two of

    Mary's Kitchen also makes roast beef hash. Taste is subjective. I like both and they don't
    smell like any dog food I've fed my dogs. I'm afraid I haven't tasted any dog food so can't
    comment on that.
