I'm not Italian, nor do I play one on TV. But my favourite garlic toast calls for roasting whole
heads of garlic in the oven. Toast the bread slices, brushed lightly with olive oil, on the stove
top or in the oven on a griddle. Remove them before they get too browned.Squeeze some of the garlic paste from the roasted cloves on top of the slices of bread. If you want
to add cheese, I'd suggest a nice Peccorino Romano, thinly sliced. Then you might want to pop the
slices under the broiler for a minute brushed with a little more olive oil. Garnish with some fresh
basil leaves. MMMM!Jill
