    I hope everyone has been enjoying the festivities.

    Does anyone have any thoughts on which is the best rice to use for cooking Paella?

    You need a short, round-grained rice. Ideal is Bomba rice which is from Spain, but it can be hard to
    find. Lacking that use a rice you would use for risotto such as arborio or carnaroli.

    to find. Lacking that use a rice you would use for risotto such as arborio or carnaroli.

    I use pearl rice. It is short, rounded, very similar to rices used to make risotto.

    In fact, that is the only rice I will use for risotto. Inexpensive and works well. Why pay
    exorbitant prices for arborio or basmati when plain pearl rice will do?

    And yes, I have tried both arborio and basmati.

    Indeed. I get pearl rice at the Latin stores, and always have got fine paella out of it.

    Certainly, using basmati rice for paella or risotto is a very ill-advised maneuver. Just the
    wrong universe.

    Bomba rice that Peter mentioned, *is* one of the two types of Calasparra rice, the other being
    Sollana. Both are wonderful for paella, indeed. However, paella is a Valencia dish, whereas
    Calasparra is in the neighbouring Murcia. The traditional rice in paella is Valencia rice...
