I recently was on a ride with one of my knowledgeable friends and he said that I should take a few gears off of my rear cassete. Would this be beneficial? If so, how would I go about doing this and how many gears. Any ideas guys??

Either that was translated poorly or your friend isn't so knowledgeable....
Perhaps he was suggesting that you're carrying more low end climbing gears than you need for the terrain near you and the riding you do and could swap to a cluster with the same number of cogs but less range (e.g. 12-25 instead of an 11-32) but people don't typically 'remove' gears from their rear cluster. Or perhaps you're currently riding a triple crankset and he was suggesting a double would do just fine again given your local terrain and riding style. Or maybe he's a fixie hipster and thinks all those excess gears and shifters are just a PITA and very unhip and why have more than one rear cog.
Hard to say but I seriously doubt he was suggesting you toss out cogs and replace them with extra spacers as that's pretty ridiculous.
