Good job Kate. And now for the rec for the mince [censored] with filo (pretty please with Splenda on
top? 🙂 )!
I just buy the Filo pastry - get it in Sainsbury's from the Jus-Roll type section of the
freezers or fridges, I think - and use my home made mincemeat, which is in with the Christmas
stuff on my web site.
Just thaw the filo sheets, cut into 4" squares, layer two squares so they look like a star, pop a
teaspoonful of mincemeat into the middle, and gather up into a little bag shape, pinching the pastry
shut over the mincemeat.
Remember while you are making them to keep the as yet unused bits of pastry under a slightly damp
tea towel or it will dry out an get brittle and be unworkable.
Bake for about 10 mins, and dust with sifted icing sugar if you like. Personally, I prefer
them plain.
They work out at about 1.5 points each. The good thing is that filo pastry has no fat in it, unless
you do the traditional thing and brush each sheet with melted butter, so, although the mincemeat has
fat in it, the pastry is low in points. Enough fat comes out of the mincemeat in cooking to make the
pastry rich.
If you don't want to do the purse shapes, roll them up like mini Spring Rolls.
