'In the area' there are also good bike paths in the town of Jackson and along the village road from the park and ride at Stilson to Teton Village.
In terms of riding on roads there are many good rides including both the inner and outer park roads, in the fall and spring there's a few weeks when the inner park road from the Taggart Bradley trailhead to signal mountain is closed to public vehicles (still some GTNP and GTLC maintenance vehicles), that's a great time to ride without traffic. The main highway has a big and safe shoulder but cars drive fast.
The loop around Antelope flats through Kelley as either an out and back, possibly with side trips up the Gros Ventre road or out to Shadow mountain are very good low traffic roads but they lack shoulders. Still those are ridden safely all the time by cyclists of all ability levels. Similarly the Moose Wilson road is great and connects to the village road and the bike path down there but a couple of miles of it is unpaved but hard packed and typically pretty good riding even on a road bike but definitely watch the washboard and potholes that develop later in the summer when it hasn't been graded recently.
Fish Creek North out of Wilson to the dead end is a great, low traffic ride that can easily be connected to the village bike path or into town along highway 22. The old pass road is awesome but very, very steep climbing on a road that's paved but no longer open to traffic. It's a great way to climb the pass but you'd better be carrying some low gearing. Other good roads include Fall Creek down to Redtop and back (don't ride the loose gravel South of Redtop unless you have a mountain or cross bike) and South Park Loop South of Jackson.
