Regardless, you don't have to replace your crankset ...

First. Any 8-speed SHIMANO shifter + Shimano rear derailler will work with your 8-speed CAMPAGNOLO cassette.

A 10-speed Campagnolo shifter + an 8-/9-speed Shimano rear derailleur yields 8-speed indexing ...

My impression (I guess I could check this at some point in the future) is that the 8-speed Campagnolo rear derailleur was interchangeable with an 8-/9-speed Shimano rear derailleur ... if that is the case, then you can simply get the Veloce 10-speed Flat Bar shifters & then the only thing you will have to worry about is the front derailleur.

If the 8-speed Campagnolo rear derailleur doesn't work properly with the 10-speed Campagnolo shifters, then you can get any 8-/9-speed Shimano rear derailleur.

BTW. It's not for me to suggest what you should do with your Pinarello, but it seems a pity to turn it into a Flat Bar bike ...

If it isn't a 'style' thing, then I would recommend you consider getting a hi-rise stem + wider handlebars AND continue to use the current, Athena shifters ... heck, depending on how high the handlebars currently are, placing your hands on the hoods (the common place, BTW) when you ride may actually work for you if you give it a try.
