Hot Chocolate

  1. In the movie "Chocolat" (Juliette Binoche, Johnny Depp, Lena Olin, Alfred Molina, etc), the lady who
    ran the Chocolate Shoppe served a drink she called "hot chocolate" but it didn't look anything like
    the hot chocolate that I've had. The hot chocolate I'm accustomed to is more milky and thin, but the
    drink in the movie looked like hot fudge sauce. However, people in the movie were drinking it as a
    beverage. Is there such a drink? Or was that just done for effect for the movie? If there really is
    a drinkable hot chocolate like that, does anyone have a recipe for it?

    Castillian Hot Chocolate Yield: 6 Servings

    Ingredients

    1/2 c unsweetened cocoa 1 c sugar 7 tsp cornstarch
    2/2 c water 4 c milk

    Mix the cocoa and sugar together.

    Dissolve the cornstarch in the water and combine with the cocoa-sugar mixture in a medium-sized
    saucepan. Stir this until it is a smooth paste. Begin heating this mixture, continuously stirring it
    with a whisk. Gradually pour in the milk. Continue stirring as you bring it to a simmer. Simmer,
    stirring often, for about 10 minutes. The cocoa is ready when it thickens and is glossy and smooth.

    Mexican Hot Chocolate

    This is serious chocolate. This very rich drink is almost a dessert in of itself. It makes the
    perfect late night drink with cookies as well as a great finish to the meal. Don't skip any steps
    and throw the eggs right into the chocolate. You will have hot chocolate with scrambled eggs
    floating in it.

    4 ounces unsweetened chocolate 4 cups milk 2 cups heavy cream
    3/4 cup sugar 1 1/2 teaspoons cinnamon 2 eggs 3 teaspoons pure vanilla extract

    Melt the chocolate in the top of a double boiler. In a separate heavy saucepan heat the milk and
    cream on low until hot but not bubbling. When the milk mixture is hot add 3 tablespoons of it to the
    chocolate and mix well. Blend in the rest of the milk mixture, the sugar, and the cinnamon. In a
    small bowl beat the eggs and vanilla. Add a tablespoon of the chocolate mixture to the eggs and beat
    well. Slowly stir the egg mixture into the chocolate. Whisk the hot chocolate briskly in the double
    boiler for 3 minutes, then serve immediately.

    Makes 8 servings.

    Preparation Time: 10 minutes Cooking Time: 15 minutes Total Time: 25 minutes

    For one, I believe what was served in the movie was true hot chocolate, rather than the more usual
    hot cocoa--i.e., made from melted chocolate rather than cocoa powder. Have a look here:

    I first tried one of these "starch thickened" hot cocoas at the NY Chocolate Show a few years ago; I
    don't recall the brand. My friends and I thought it was... odd. Vaguely like thin, chocolately
    gravy. From what I can tell, the main purpose of the (corn starch, potato starch, etc.) is a thicker
    texture and heavier mouthfeel--but it doesn't come close to matching the effect given by fat. Using
    unsweetened chocolate works better, at least for my tastes.

  6. This comes close to the retentive stuff that goes on in alt.coffee but is not intended to be taken
    as such. In Antigua, Guatamala I had the pleasure of having a hot chocolate made from freshly
    roasted and ground cacao. Very hard to top that flavor. Ambiance had an effect as well. Chilly
    mountain air and a charcoal brazier under the table to keep the footsies warm - hard to beat.

    Freshly roasted and ground? You mean the stuff which has been made in a factory, and has been
    sitting in a can on the store shelf for 18 months doesn't taste just as good?

    What a surprise! Maybe I need to try some of that freshly roasted, freshly ground coffee? 🙂
