I didn't want to ask the people I was preparing
it for about the gumbo crabs in my previous
question here, so I just *went for it".
Here's my report card:
I found out that the crabs don't fall apart and that they're left in the pot for those who later
wish to go and get just a crab out of the gumbo to break open for bits of crab meat.
I went with a traditional gumbo this time, but next time I'm going to put some tasso and okra in it.
I also felt I should have made the roux a bit darker.
It was good, if evidenced by the scant remains leftover to refigerate. I served it with rice, file
powder and a loaf of fresh french bread.
I offered freshly baked banana nut bread for desert, along with some chicory coffee and cream.
We lit the fireplace and had a very nice time last night.
