Request: Wedding White Fruit Cake
From: Letty <[email hidden]>
One of our president's daughters had a white fruit cake for a wedding
cake. I lost the recipe. Does anyone have it?
Luci Baines Johnson Wedding Cake
1 cup apple juice
1/2 cup apple juice soaked raisins
1 1/3 cups cake flour, sifted
1 tsp baking powder
1/4 tsp salt
1/2 cup butter
3/4 cup sugar
5 egg whites, unbeaten
3/4 cup chopped candied pineapple
1 cup pecans, chopped
1/2 tsp. vanilla
Cover raisins with apple juice and soak in fridge for 2 or 3 days. Drain
and spread raisins on linen towel to soak up surface moisture. Preheat
oven to 300 F. In a bowl, sift flour once and measure. Add baking powder
and salt. Sift 5 more times. In another bowl, Cream butter, then add sugar
gradually. Continue mixing until fluffy. Add egg whites to creamed butter,
one at a time. Beat thoroughly after adding each egg white. Add raisins,
candied pineapple, pecans and vanilla to creamed butter mixture. Mix well.
Now add flour to creamed butter, a little at a time. Beat after each
addition until smooth. Bake in greased loaf pan (8"x4"x3"😉 lined with
heavy paper. Bake at 300 F. for about 1 hour-15 minutes, or until done.
