But CO2 is emitted during rising of dough and baking and that is
alleged to be the main cause of warming!

Well, no, because when used in cookie dough and the like, baking soda
acts as a leavening by causing a chemical reaction which produces carbon
dioxide. It's the carbon dioxide bubbles which cause the product to
rise.
The process outlined in the link is an interesting one, though!
