  1. I posted this a while back but thought I'd repeat. I hate wasting
bananas just because they're too ripe and this recipe suits my "rush
schedule" to a tee. It's made in the food processor in nothing flat.
In fact, I mixed it up before the oven reached the proper heat.

    Banana Nut Bread with Raisins

    3 large bananas, very ripe
    1/2 cup brown sugar
    2 eggs
    1/2 cup oil
    1 teaspoon vanilla
    1 1/2 cups flour
    3/4 teaspoon salt
    1 teaspoon baking soda
    1/2 teaspoon nutmeg
2 teaspoons orange rind (optional) -- grated
    1 cup pecans or walnuts
    1/2 cup raisins or currants

Heat the oven to 325ºF. Butter a 9" x 5" loaf pan. Purée the bananas
in a food processor. Add the sugar, eggs, oil and vanilla and pulse
just until blended. Add the flour, salt, baking soda and nutmeg, plus
orange rind if using. Pulse just until combined. Add the walnuts and
pulse until chopped. Stir in the raisins.

Pour the batter into the pan and smooth the top. Bake until a toothpick
inserted in the center comes out clean, 60 to 70 minutes. Remove the
bread from the pan and cool.

This looks good, Dora! Quick and easy suits me as well!

    Thanks for the recipe.
