This one I hope to devote to cooking issues, using my book Elements of Cooking: Translating the Chef’s Craft for Every Kitchen as the launching point, and its goal is to enhance basic technique.
So far, the discussion in the comments section is very good. I am already learning some things, such as putting aromatics into a broth later rather than sooner, with the idea that the flavors are brighter that way.
One of the contributors to the discussion is his old teacher at the CIA who he wrote about in Making of a Chef, Mike Pardus.

His blogs are fun. It was interesting to see that all three judges for Iron Chef America favored Besh, as did I, based on what I saw but never tasted. The three Iron Chefs all favored Symon. Ruhlman changed his vote to Symon, too, giving Symon a 4-2 win. I always liked his behind-the-scenes comments and am looking forward to his new blog too.

None of this talley-ing up was mentioned on the show that I watched while it was on/ I did record it, too. I was wondering what the actual scoring was as they did not mention it on the show I saw.
Yes, this is interesting to me as I had no inkling where each set of judges stood. Praise be to Ruhlman -- since I favored Symon.

The vote between Besh and Symon had to be difficult. I favored Besh but Symon definitely had the personality for a TV presence. We'll see how he does. This is one of the few FoodTV programs I still watch.

Symon was a very quick and strong learner that listened to the judges and applied everything to his next competition. Besh was personable, but tended to stick to his own style. I didn't think that Besh would stand the test of time, but I did think that Symon would. Janet

I watched last night's program for about 15 minutes and got bored, but it's recorded -- DH noticed that Alton had shaved off the scruff.
