As mentioned on the NG it depends on the meat thickness and if you add
anything that breaks the meat down with enzymes as pineapple, papaya, any
fruit basically.
I've went into the Cardinal Sin area and marinated thick steaks such as all
tenderloin cuts with excellent results.
You can get by safely by using a basic non acidic marinade that will last
for 1 weeks work of marinating.
You can figure out if you like 12 hrs. or 3 days of marinade with this. It
will also work for thin flank style or cubes, etc.
Just use about 1/3 soy sauce to 2/3 water and add your favorite seasonings.
Mine are garlic, onion, salt, black pepper, brown sugar (to desired
sweetness) and other green herbs. It comes out EXCELLENT!
You can make up the marinade prior to adding the meat and that way you can
taste to liking. The marinaded meat flavor will be approximately 20 - 30% of
the marinade flavor with the marinade at a concentration level to where you
could drink a glass of it. Like a very strong tea drink, but similar
comparison.
Keep us posted.

Speaking of beef...
I usually do 24-hour marinating. Have done 48-hour on occasion. Sometimes
6
hours.
48-hours is a bit much as the meat is just about cooked before it grills.
Got 6 hours on a flank steak currently.
How long on average will you let your meat marinate?
Andy
Knows that last line sounded a tad perverse.
