450 g Aubergine
225 g Courgette
225 g Carrot
3 tbls Vegetable oil
2 tsp Cumin seeds
50 g Cashew nuts
40 g Coconut, fresh
0.5 tsp Cayenne pepper
0.5 tsp Turmeric
150 ml Soured cream
Salt
2 tbls Coriander, fresh, chopped
Rali-mili subzi
Serves 6
1. Roughly chop the aubergines. Chop the courgettes and carrots.
Preheat the oven to 190 °C / Gas 5. Mix the aubergines, courgettes and
carrots in a large roasting tin with 1 tbls of the oil and roast in
the oven for 15 minutes.
2. Meanwhile put the cumin seeds in a small heavy-based pan, dry fry
over a low heat for 5 minutes and set aside.
3. Put the cashew nuts and coconut in a blender or food processor and
chop finely. Add the cayenne pepper, turmeric, soured cream and salt
and process until thoroughly mixed.
4. Heat the remaining 2 tbls oil in a heavy-based pan and add the
roasted vegetables, cashew and coconut mixture and the cumin seeds.
Cook for 1 minute, then sprinkle the vegetable mixture with the
chopped coriander and serve.
ALTERNATIVE You can use desiccated coconut instead of fresh. Simply
soak 25 g in 150 ml boiling water for 20 minutes, then drain and
process as above. You can also use the same quantity of creamed
coconut.
