Im not sure how to remove my dura ace crank bolts..
I have the correct hex wrench for the job.. but do the bolts loosen by turning them clockwise or counter clockwise?

Im not sure how to remove my dura ace crank bolts..

For nine speed Dura Ace, you just turn the 8 mm hex counter clockwise to loosen. It usually takes quite a bit of leverage though.
Take a look here for 10 speed:

Alienator could use his sharp tongue....no need for a laser or cutting torch.
8mm wrench turned counterclockwise. You'll start to feel it loosen then tighten up some, but keep turning. Those cranks are self extracting.
maybe im being thick.. actualy im fairly sure im doing that..
but in terms of clockwise/counter clockwise does it make a difference what side of the bike im looking at.. and if its upside down or not (which it will be if im doing any work on it as i don't have a proper stand)?

There are no reverse threads with crank bolts. Anticlockwise to loosen for both sides.
When you put it back on be sure and line the pedals up side by side before tightening. 😄

Maybe tools are beyond your skillset.
When you are behind a clock counterclockwise is now clockwise and front is now back, black is white and it's all one big purple haze.

😎 thanks for everyones help.. guess what tonight i managed to undo the crank bolt!
tomorrow we'll try removing the actual cranks themselfs.. its all very exciting, so i didn't want to rush it all in one go.
You see if you align the pedals you can push with both legs at the same time.
The most effective way to move the bike without confusion of movement.
Total "oneness" with the universe.

Something is amiss .... If they are 9 speed DA cranks the bolt should be self-extracting. ie; when you unscrew the bolt it pulls the crank arm off. The bolt stays attached.
I never do this with a hex key. Instead I have hex sockets that I use on my 3/8ths drive torque wrench. You get way more leverage with this setup. When re-installing I can torque the crank arm down to the correct torque spec. See the Park Tool website for a complete lising of crank arm torque.
