Turkey Potpie

1/4 cup butter
1/2 cup chopped onion
1/2 cup chopped carrot
1/2 cup chopped celery
1/4 cup flour
2 cup turkey or chicken stock
1/2 cup green peas
2 cup chopped cooked turkey
1 teaspoons fresh ground black pepper
1 teaspoons salt
1 refrigerated pie crust
Melt butter over medium heat. Cook onion, carrot and celery in butter
until soft. Sprinkle with flour and stir until well-coated. Add stock and
bring to a boil. Simmer until thickened, and stir in peas, turkey, pepper
and salt. Pour into a deep pie dish and cover with refrigerated pie
crust. Crimp and vent the crust. Bake at 400 degrees until crust is
brown and filling is bubbly, about 25 minutes. Note: This can be made as
a single- or two-crust pie. If two crusts are desired, line pie dish with
one crust before filling, or use the pan with preformed crusts.
