Kentucky Hot Browns
12 slices bread, toasted and sliced diagonally
1/2 cup(1 stick) butter
1/2 cup all-purpose flour
3 1/2 cups milk
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 cup (4 ounces) shredded Cheddar cheese
1/4 pound thinly sliced cooked ham
1/4 pound thinly sliced cooked turkey
12 slices bacon, cooked until crisp
Trim crusts from bread and discard. Arrange 4 bread triangles in a
single layer in each of 6 lightly greased individual baking dishes or
a 9-by-12-by-2-inch baking dish that can go under the broiler.
Melt butter in a large skillet over low heat; whisk in flour. Cook,
whisking constantly, 1 minute. Gradually whisk in milk; add salt and
pepper. Increase heat to medium; cook, whisking constantly, until
thick and bubbly. Add cheese, stirring until melted.
Pour half the sauce evenly over the toast. Add a layer of ham and a
layer of turkey, dividing evenly. Top with remaining sauce.
Broil 5 inches from heat until bubbly and lightly browned. Top each
sandwich with 2 bacon strips. Serve immediately.
