Gazpacho (from Colorado Cache Jr. League Cookbook)
Ingredients: 3 large ripe tomatoes, seeded and chopped 1 green bell pepper, chopped 1 cucumber, seeded, peeled and chopped 1 cup chopped celery 1/2 cup chopped green or sweet onion 4 cups tomato juice (V-8 is better) 5 TBSP red wine vinegar 4 TBSP good olive oil 2 tsp. salt (I recommend "to taste"--tomato juice/V8 are salty) 1/2 tsp. freshly ground black pepper
Chop vegetables finely. (Note: I've had this made in a food processor and hand-chopped is better.) Combine all ingredients in a large non-metallic bowl and chill overnight. (The original recipe calls for adding avocados before chilling, but they get mushy.) You may vary the amounts of ingredients of course.
