i have found that there are two ways of cooking creme brule but im not sure which one to try first so i thought i would ask in here. there is a no bake creme brule or the one that you bake in a water bath.
i went out for dinner the other night and had a creme brule with orange zest in it. it was the nicest dessert that i have had in a long while but i dont know if it was a baked one or not, as it was really thick custard.
can some one please help me on this one as i am hanging for some brule.

It was baked - richness of the custard depends on if it's whole milk or not. The topping is caramelized with a kitchen torch.
