I introduced a friend to green curry last night. She subscribes to a fresh veggie co-op thing where she goes to pick up whatever is fresh every two weeks. This week she got eggplant (the long and skinny variety) green beans, red onions, peppers, and tomatoes. Her husband and mind are both seafood junkies. We are not. So we were on our own last night and I suggested the curry. She didn't think her local grocery would have the green curry paste-but they did! Along with the coconut milk. We sauted a red onion, added the chopped up eggpland and blanced green beans. We then stirred in a couple tablespoons of paste and a can of coconut milk. The curry paste recipe called for added brown sugar and fish sauce, but we didn't do that. On the side we had jasmine rice and grilled tomato slices and a green salad. It as good.
