Baked Lima Beans

6 pounds dry large lima beans
1 gallon boiling water
4 ounces pimiento -- chopped
1 ounce salt (1 1/2 tbsp)
1 cup molasses
24 ounces bacon -- sliced
Wash beans (p. 632). Add boiling water. Cover. Let stand 1 hour or longer.
Cook beans in the same water until tender, about 1 hour.
Add seasonings to beans. Scale into two 12x20x2-inch pans, 8 lb 6 oz per
pan.
Place bacon on top of beans. Bake at 350°F until top is brown, about 1 hour.

beans and simmer until tender.
