    Whole fish or fillets? if whole fish it is most often boiled or simmered
    in various liquids, boiled, poached or braised, but there is no reason
    not to grill it, and spit cooked fish has always been a favourite of
    mine, especially if done over a wood fire. If boiling the whole fish
    tie up the head well so it will retain its shape.

    Pan fry or saute fillets in butter or oil with garlic and some finely
    diced shallots, add a nice sauterne to finish the fish lift it out of
    the pan and let the sauce reduce a bit.

    The fish can have an egg and bread crumb or seasoned four coating if
    desired, many people these days use a potato coating for fish. I have
    seen a whole thing tossed into deep fat and fried, not quite the same
    thing as a gentile simmer in a white wine court bouillon but still tasty.

    Now if you had asked about halibut, i think that's my favourite fish to
    dine upon.

    BTW young turbot im told is just cooked more gently & quickly than more
    adult or older turbot.

    I don't think I've thought about turbot in over 25 years. I don't think
    I've *seen* any turbot for amost that long. Is it still common if you
    shop fish markets? I don't; my fish come from the supermarkets. Has
    "turbot" been replaced by a new hip slick and cool name thought up in
    some marketing department?

    I heard 'the wife' or 'little woman' referred to as 'the old hide' by an
    elderly man in a bar in the late seventies. Umm... I was deeply offended!
    I've never seen turbot in the stores here or never paid attention.

    someone PLEASE explain this Tubort to me? I've never heard of this
    fish because I'm stranded on an island down here in the USA. Ahh the

    Ah! A smallish ugly flounder but much bigger than a sole. I'd probably
    use a flounder cooking method if I had one.
