Chicken, broccoli and cheese casserole (Low Carb)
2-3 Chicken breast halves
2-3 Broccoli stalks
1 Package shredded cheese
4 Slices of bacon
1/4 cup half and half or heavy cream
salt
Cut the chicken into cubes & place into large skillet. Tear the bacon
into pieces and dump over top of the chicken. Cook over medium heat for
about 7 minutes or until the chicken and bacon is done (bacon should not
get crispy). Chop the broccoli tops into pieces similar in size to the
chicken chunks. Discard the stalks. Boil in a pot until tender. Drain
the chicken and bacon (this is important because the recipe will taste
like the bottom of a frying pan otherwise) Drain the broccoli also.
Combine the chicken/bacon and broccoli over low heat. Add as much cheese
as desired (The whole package makes a nice creamy casserole, but others
might find it too cheesy). Stir a little until the cheese melts. While
stirring, pour in half and half. Stir until mixture is creamy. Add salt
to taste. Serve in a bowl. I've added onions before and they are good
in this recipe, but they add slightly to the carb count.
