I've used all 3 in 9 speed and I get the impression that the ultegra doesn't jump gears as easily as 105 or Tiagra.

Imagination, mostly due to differences in wear. The only diff is finish/weight between the groups.

I'm going to guess the differences you have experienced have more to do with the derailleur tuneing.
So there's no difference in the design, such as the cuts that help with shifting?
